He has written 12 books, including The wagamama Cookbook, and has received a Glenfiddich culinary award for his creative writing. He now owns The Colonsay hotel in Scotland and Hatch and Sons restaurant in Dublin, as well as a consultancy that works with prominent restaurants, pubs, and hotels.
